HAPPY HOUR

 I love Happy Hour! It's really just a mini celebration. Whether you're unwinding at the end of a work day, kicking off an evening activity or catching up with friends, Happy Hour is a chance to relax and regroup. And not only does that call for a cocktail, mock-tail, coffee or tea, it calls for snacks. Here is one of my favorite Happy Hour recipes. These nuts are easy to make and delicious to eat!   Roasted Rosemary Cashews  Author: Leslie Reese ~ adapted from Food Network  Ingredients  1 1/2 pounds cashew nuts  1 tablespoon melted butter  1 tablespoon dark brown sugar  1/2 teaspoon cayenne pepper  2 teaspoons sea salt  2 tablespoons fresh chopped rosemary  Instructions  Preheat oven to 375 degrees. Spread nuts onto baking sheet. Place in oven and bake for 10 minutes until nuts are warm. Mix remaining ingredients in a large bowl until combined. Add warm nuts and toss until nuts are coated.  Serve warm.  Notes  ~You can make the nuts ahead of time and store them in an airtight container to save time before a party.  Enjoy!
